Thrifty meals

Cooking on a budget is becoming more of a challenge for many people in the current economic climate. Keep an eye out for supermarkets slashing prices before closing time. After Christmas I got a large bag of carrots for 8p, parsnips for 9p and potatoes for 8p. Last night we enjoyed vegetarian sausages and mash and today we had parsnip soup for lunch.
I peeled 4 carrots, 8 parsnips, an onion and a leek and simmered them gently until the veggies were soft. I then added a couple of vegetable stock cubes, a pinch of mustard powder and a handful of dried herbs. I filled the stockpot with water and towards the end of cooking added a can of haricot beans. The soup was then liquidised and served warm with croutons. The whole batch cost less than £1 and will last several days! It was delicious too.

We also discovered Approved Foods on-line and made the most of money savings by purchasing slightly out of date foods saving them from landfill and helping our budget.

Life doesn't have to be hard!



Saw doctor this morning as have been unwell since New Year. Violent reaction to some medication prescribed plus flu - a good start! All peaceful again in the household. Outraged at price of material, spent £11.50 in charity shop on pure cotton bedding to convert into clothing... pictures to follow.

New Beginnings indeed!

Managed to fall out with husband on New Year's Day. I could divulge the contents of said fall-out, but as his ascent up Mount Ego has been somewhat delayed by my comment, I had best hold that one to myself for now. Suffice it to say that the resolution about thinking before speaking was not acted upon. I am guessing also, that his inability to accept an apology did not figure on his resolution list. Ah well, as I previously mentioned, this is the journalling of a flawed human being.

New Year's Day was spent at Mother's in North Norfolk with husband, three sons and delightful girlfriend of No 1 son, sister, niece and nephew. It was a lovely day, Grumpy Old Hector aside, and all other resolutions duly upheld. No. 2 son, collected in Norwich on the way through, was very much worse for wear after his New Year's Eve revelling and spent much of the time ensconced in the cloakroom getting rid of his student loan down the toilet. The meal was wonderful and apart from the very long drive home in stony silence, it was a good day. (Our teenage sons spend journeys in headphone land attached to MP3 players). I discarded the jazz cd husband had placed in cd player in favour of Pink Martini, which went some way to making the journey more bearable. Apart from that, I focussed on the minute by minute changing of the car heating system to accommodate my raging menopausal fluctuations in temperature and availed myself of the fan donated by mother. I guess I should be thankful that Mother Nature has not seen fit to endow me with a beard as well, as suggested by the phenomenal Dylan Moran.

 Breakfast? Porridge with yoghurt and fruit seems suitably healthy.

Good Morning 2012



Good Morning World and Happy New Year.


Woken by Pumpkin and informed that it was morning. Pumpkin, in turn, was woken by Zena the dog and Gomez the cat!  Pumpkin is working her way through left-over Christmas crackers, having woken an extremely grumpy teenager, and I am working my way through my Redbush tea. Husband is writing his blog, covered in Christmas stickers and wearing several Christmas hats, overseen by his adoring niece who has just told him that he is her favourite "boy"! The world through the eyes of a 5 year old really is quite wonderful. Life is simple. She asks to have her needs met. She lives completely in the moment. She is quite simply happy. There are no grudges, no stored worries or grievances. Are all children natural Buddhists?
